YK Elders Home residents enjoy akutaq

Thank you to Jerry Riley and Edna Henry for making akutaq this last weekend for our elders at YK Elders Home. Everyone loved it and it was gone in no time. 

Jerry and Edna both work in the kitchen at YK Elders Home and have started to help us increase our native food offerings. Thank you Jerry and Edna!

For anyone that is interested in trying to make akutaq for themselves, below is a simple recipe shared from the YKHC dietary team.

 AKUTAQ

Ingredients

  • 1 cup Crisco
  • 1 cup sugar, granulated
  • 2 cups white fish 
  • 1-2 cups berries, fresh

Instructions

  1. Mix 1 cup crisco and 1 cup sugar, granulated together until light and fluffy.
  2. Add 2 cups white fish, flaked. Fold until combined.
  3. Add 1 cup berries, fresh. Fold until combined. 
  4. Add additional 1 cup berries if needed to reach a “soft-serve” consistency.

Enjoy!

Alternate ingredients:

  • May substitute halibut or sheefish for white fish.
  • May use an assortment of raspberries, blackberries, salmonberries, blueberries, tundra berries, etc.
